JAPANESE DASHI STOCK

4 litres Water
15 cm X 6cm piece Kombu
100g Bonito flakes


Method

  1. Heat water with kombu and bonito flakes and bring to a boil.
  2. Simmer to two to three minutes.
  3. Strain and reserve for further usage.

Usage

  1. It is used for making various types of Japanese soups such as udon noodle soup.
  2. Dashi stock is also used for poaching certain vegetables and meats.

Tips for good dashi stock

Do not over boil the dashi stock as it will become bitter.


Storage
Japanese dishes use everything fresh. So make dashi stock for immediate use and do not store for more than two hours.
